Those raspberry-maple muffins we made yesterday came in really handy for breakfast! I buttered it & took to to go! Quick & simple! Ryan was kind enough to stop by my work at lunch time to drop off a freshly made fried tofu sandwich with radishes, cheese, zucchini, & greens. A hard boiled egg on the side & raspberries for dessert made a very well-balanced meal! Great job, Ry!
For dinner I slaved over the stove! Just kidding…I did cook, but surprisingly the corn fritters that I served on a bed of greens really didn’t take a whole long time to make! They were a super sweet summer dinner, & I enjoyed them immensely! Here’s how I made them:
Corn Fritters
2 ears of corn
1 clove of garlic
1/2 cup of milk?
1 cup maple muffin mix
1 egg
Cooking oil
- Boil the ears of corn for 8-10 minutes.
- Cut the corn kernels off of the cob.
- Chop garlic.
- Add garlic, corn, & milk to a blender & blend until creamed.
- In a medium mixing bowl, mix egg and muffin mix.
- Pour creamed corn into the mixing bowl & mix all ingredients.
- In a frying pan, pour a generous amount of cooking oil & bring to temperature.
- Drop by tablespoonful into the pan, then flatten a bit so each fritter is pretty thin.
- Fry each fritter until it is golden brown.
- Serve over a bed of greens!
It’s weird that I used muffin mix for fritters, isn’t it? Eating only local food means that you’ll have to make a lot of substitutions for ingredients that you don’t have at your fingertips. Since we can’t seem to find any affordable local flour, we’ve been using that muffin mix that we bought instead. You do not need to use this at all, use flour if you’ve got it, or your imagination!
After dinner I was delighted to enjoy a mostly local soda that I found when we visited Sunflower Natural Foods a couple of weeks ago. Meetinghouse Soda is made in Gilmanton, New Hampshire, & is made only of the purest ingredients! Check the label! Sure, the cane sugar & lemon juice are not local, but understand that you can have tasty treats that don’t involve high-fructose corn syrup, & ingredients you can’t pronounce. And, you have got to have a look at their website! It really speaks worlds about the genuine quality of the company. They purchase as many ingredients as they can from their friends; local farmers. Eating locally brings people together
And, check it out! A coworker heard about our local summer & graciously provided us with a mini-garden she had started. It includes brussel sprouts & mesclun mix, & is planted entirely in her own organic compost! How thoughtful! I really hope we don’t kill it!
